That will depend on so many factors and how the service provider defined what detailing means to their establishment.

Some of the factors could include:
The size, age. and condition of vehicles your establishment cleans. (neglected vehicles occupied by children, animals that are heavily stained, with malodourous conditions will vary greatly)

I'm using microsplitters to clean carpets and upholstery now. Really speeds up the whole process. Get rid of the dry dirt, treat the oil-based stains and then spray the interior soft-surfaces with microsplitters, leave for 15 mins and then rinse with fresh water in the extractor. I agitate the surfaces first with a certain mini air-powered brush from Detail Plus.
