New fabric for Jag E

Hello,
The black plastic like material on my 1970 2+2 Jaguar E dashboard was in too bad condition, so I decided to remove it and replace it with simili leather. I have a problem with dismounting the front panel: there are 2 turning knobs for air control which I am unable to remove. Any advise?
I also need to buy the right glue. I live in Palms Springs and during summer the temperature in the garage easily reaches 100 deg F. I thus need a glue which will be heat resistant. Any advise?
